There are many different types of fudge you can make.  There’s chocolate fudge, caramel fudge, peanut butter fudge, marshmallow fudge, fudge with nuts or fruits added, and fudge with add flavors such as vanilla or cinnamon.  Changing the ingredients of your fudge can turn a sweet dish into a savory one, or can turn a nutty fudge into a fruity fudge.  It’s a lot of fun to try and make a different fudge for each particular occasion.

 

Choosing a fudge recipe and ingredients:

Recipe:  Chocolate Chip & Pistachio Fudge Swirl

Serving Size:  Makes 25 fudge squares or 50 fudge triangles

Ingredients:Microwave Fudge - Choc Fudge Swirl

  • 18 ounces of chocolate chips (semi sweet)
  • ½ a cup of pistachio nuts – coarsely chopped
  • 1 can (14 ounces) of sweetened condensed milk (divided)
  • 1 tablespoon of margarine or sweet butter
  • 3 ounces of cream cheese
  • ½ a teaspoon of vanilla extract

Directions for Microwave Cooking:

  1. In a small (1 quart) microwave-safe bowl, place the 3 ounces of cream cheese.
  2. Microwave on the high setting (full power) for about 15-25 seconds, stop when you see that the cream cheese has softened.
  3. Add to the bowl, 2 tablespoons of the sweet condensed milk and the vanilla extract.
  4. Using an electric mixer, beat mixture of a low setting till smooth and set aside.
  5. In a medium (2 ½ quart) microwave-safe bowl, place the butter/margarine, chocolate chips and the rest of the sweet condensed milk.
  6. Microwave on the medium setting (half power) for about 2-3 ½ minutes, stop when mixture goes smooth when stirring and appears glossy.
  7. Add in the pistachio nuts and stir.
  8. Using a prepared pan, pour the mixture in carefully, spreading to make it even in the pan.
  9. Grab the cream cheese mixture (first bowl made), and using a spoon, drop spoonfuls over the chocolate mixture in the pan.  Then swirl the cream cheese gently over the chocolate.
  10. Leave mixture to stand or chill in refrigerator until it is firm.

Serving:

  • Cut mixture into 25 even squares.  Do this easily by making 4 cuts across and 4 cuts length-ways trying to keep even so the pieces are of equal sizing.  Optional:  Cut each square diagonally across for smaller pieces.

Storing:

  • Best stored in an airtight container, separating the layers with wax paper.
  • Keep in refrigerator for best results.

 

Recipe:  Double Layer Choc & Peanut Butter Chip Fudge

Ingredients:Microwave Fudge Recipes - Choc & Peanut Butter

  • 1 cup of chocolate chips (semi sweet)
  • 1 cup of peanut butter chips
  • 1 teaspoon of vanilla extract (divided)
  • 2 tablespoons of softened margarine or butter
  • 1 can (14 ounces) of sweetened condensed milk (divided)

Directions for Microwave Cooking:

  1. Prepare a loaf (9×5 inches) or a square (8×8 inch) baking pan by lining with foil.
  2. Using a medium sized microwave safe bowl, put in 2/3 of a cup of the sweet condensed milk, the butter/margarine, and the peanut butter chips.
  3. Microwave on the high setting (full power) for about one minute or until the mixture becomes smooth once stirred, and the peanut butter chips have fully melted.
  4. Add in ½ a teaspoon of the vanilla extract, whilst stirring.
  5. Pour into pan straight away, and spread mixture evenly through pan.
  6. Using another medium size microwave safe bowl, place the rest of the sweetened condensed milk with the chocolate chips in the bowl.
  7. Microwave this bowl on the high setting (full power) for about one minute or until, like previously, the chocolate chips have melted, and the mixture becomes smooth once stirred.
  8. Add in the rest (1/2 a teaspoon) of the vanilla extract, whilst stirring.
  9. Pour this mixture straight away, over the peanut butter layer already in the pan.  Spread evenly across.
  10. Leave the layers to cool, then cover and put in refrigerator until firm.

Serving:

  • Once fudge has firmed, remove from refrigerator, take it out of the pan and place onto a cutting board.  Carefully peel off the foil.  Cut fudge into squares of approximately 1×1 inch.

Storing:

  • This fudge is best kept stored in the refrigerator in a tightly covered container.

Tip:

  • To achieve the best result, do not double recipe.

 

Recipe:  Choc Chip & Marshmallow Nutty Fudge

Serving Size:  Makes approximately 80 (1×1 inch) fudge squares.

Ingredients:Fudge Recipes - Choc Marshmallow

  • 2 bags (11.5 ounce each) or 3 ½ cups of milk chocolate chips
  • 1 cup of pecans – chopped
  • 2 cups of miniature marshmallows
  • 2 cups of super fine sugar (Tip: If unable to find super fine sugar, substitute for regular granulated sugar which has been processed in a food processor until very fine).
  • ½ a cup (1 stick) of butter
  • 1 can (5 ounces) of evaporated milk
  • 2 tablespoons of vanilla extract (pure)

Directions for Microwave Cooking:

  1. Prepare a baking pan (8×11 inches) by lining with butter.
  2. Using a medium (about 2 quart) microwave-safe bowl, add in the cups of sugar and all of the evaporated milk.  Mix well together.
  3. Microwave the mixture left uncovered in the bowl on the high setting for about 3 minutes.
  4. Remove from microwave, and stir well.
  5. Place back in microwave, this time watching as you microwave for another 2 minutes.  You need to check the mixture does not boil and spill over the bowl.
  6. Before the next step, prepare the butter by cutting into 4 parts.
  7. Remove your mixture from the microwave.
  8. Add in the cups of marshmallows and the 4 pieces of butter, and stir well, until both melt.
  9. Add in the chopped pecans, milk chocolate chops, and the vanilla extract.  Mix together well.
  10. Pour mixture into the buttered baking pan, and spread across pan evenly.
  11. Place in refrigerator until fudge has firmed (over an hour).

Serving:

  • After fudge has firmed, remove from pan, and cut into squares about 1 x 1 inch in size.

Storing:

  • Best kept stored in the refrigerator in sealed plastic containers or tins.  Best consumed within 5 days.
